As the annual cycle’s pendulum swings from Spring to Summer, the soft light greens shift to darker hues, in a world changed bright with verdance. This glowing green ambiance comes upon us in June, and with it comes a bounty born of warmth and sunshine. Cradled by tender, loamy soil, it’s blown to height by the whispering winds of Summer.

I make this guacamole at least twice a month. It’s quick and easy to prepare, and it keeps in the fridge for up to 3 days. Beyond spreading it over toast or pita chips, it goes great with burritos, wraps, chicken or eggs.
Avocados are nutrient dense, boasting vitamins and nutrients such as vitamin C, vitamin K, vitamin B6, riboflavin, folate, magnesium, and more. It improves digestion, lowers the risk of depression, prevents bone loss, protects against cancer AND it’s supportive of heart health, thanks to the mono-saturated fats.

Directions:
Add the juice of the four limes to the mashed avocado and mix until it’s well distributed.
Add in the remaining ingredients and stir thoroughly.
Allow flavors to marry in the fridge for a minimum of 2 hours before consumption.
